This perfect caramelised salty-sweet snack, which is super easy to make, requires 4 simple ingredients and most importantly leaves you feeling good! These honey roasted cashews take no more than 15 mins (including roasting time) and can stay in your pantry for up to two weeks! Minimum effort, maximum reward.

Ingredients
Cashews: Raw salted or unsalted cashews are ideal as they will be roasted with the honey mixture. Omit salt used in recipe if cashews are already salted.
Honey: I like to use raw honey as it contains more beneficial nutrients compared to processed honey and has a deeper flavour profile. Feel free to use whichever honey you have on hand.
Cinnamon: this pairs perfectly with honey and adds warmth to the recipe!
Salt: any fine salt will work well.
Equipment
Air fryer/oven: I use my air fryer for this recipe but these can be roasted in a regular oven as well.
- Air fryer method: roast cashews for about 8-10 minutes at 180C until golden brown. Check at around 5 minutes and mix through so that the cashews roast evenly. Make sure to keep an eye on them as they can go from golden brown to burnt very quickly!
- oven method: roast cashews for 10 minutes at 180C until golden brown.
Pan: used to melt the honey, cinnamon and salt together before coating the cashews.
Honey Cinnamon Roasted Cashews
Ingredients
- 1 cup raw cashews if using salted cashews, omit adding extra salt
- 2 tbsp honey
- 1-2 tsp cinnamon
- pinch of salt
Instructions
- In a pan on low heat, mix honey, cinnamon and salt until the honey has thinned out. Turn the stove off.
- Add the cashews into the pan and stir thoroughly until cashews are evenly coated.
- Place the cashews onto a lined tray and air fry for 8-10 minutes at 180℃ until golden brown. Check on cashews at 5 minutes and mix cashews to ensure even roasting.*
- Allow 20-25 minutes for cashews to cool completely and harden before breaking into smaller pieces.
- Store in airtight container for up to two weeks and enjoy!
