Gluten-Free Rice Paper Almond Croissants (Air Fryer Recipe)

Servings: 4 almond croissants

Ingredients
  

Almond Filling
  • 3/4 cup almond flour
  • 3 tbsp coconut oil melted
  • 3 tbsp honey or preffered liquid sweetener
  • 1 egg
  • 1/2 tsp almond extract
  • 1/4 tsp vanilla extract
  • pinch of salt
Pastry layer
  • 4 rice paper sheets
  • 1 egg beaten
  • 2 tbsp milk or water

Method
 

  1. In a bowl, mix the almond flour, melted coconut oil, honey, egg, almond extract, vanilla extract, and salt. Mix until you have a smooth, thick paste.
  2. In a wide bowl, beat together the egg and milk to make an egg wash.
  3. Briefly dip one sheet of rice paper into the egg wash and then the other side, shaking any excess egg wash off.
  4. Lay out the softened rice paper on a flat surface and add a generous spoonful of almond filling in the centre.
  5. Fold each side of the rice paper sheet over to form a rectangle.
  6. Repeat steps 3 to 5 with the remaining filling.
  7. Air fry the croissants at 170 °C for 6 minutes. Then, turn the heat up to 190 °C and air fry for another 1 to 2 minutes. Take them out as soon as they are a little golden/crispy around the edges.
  8. Top with powdered sugar or slivered almonds and serve while still warm.
  9. Enjoy!

Notes

Storage: 
These are best served immediately. In case of leftovers, refrigerate for up to 5 days and reheat in the air fryer.
