Method
- In a bowl, mix the almond flour, melted coconut oil, honey, egg, almond extract, vanilla extract, and salt. Mix until you have a smooth, thick paste.
- In a wide bowl, beat together the egg and milk to make an egg wash.
- Briefly dip one sheet of rice paper into the egg wash and then the other side, shaking any excess egg wash off.
- Lay out the softened rice paper on a flat surface and add a generous spoonful of almond filling in the centre.
- Fold each side of the rice paper sheet over to form a rectangle.
- Repeat steps 3 to 5 with the remaining filling.
- Air fry the croissants at 170 °C for 6 minutes. Then, turn the heat up to 190 °C and air fry for another 1 to 2 minutes. Take them out as soon as they are a little golden/crispy around the edges.
- Top with powdered sugar or slivered almonds and serve while still warm.

Storage:
These are best served immediately. In case of leftovers, refrigerate for up to 5 days and reheat in the air fryer.
