3-Ingredient Fudgy Chocolate Cookies (Vegan, Gluten-Free)

Servings: 12 cookies

Ingredients
  

  • 1 cup pitted soft dates*
  • 1/2 cup runny nut butter of choice ie. natural peanut butter, almond butter, or cashew butter
  • 1/4 cup unsweetened cocoa powder

Method
 

  1. Line a baking tray with parchment paper and preheat the oven to 170 C.
  2. Add pitted dates and nut butter to a food processor/blender and blend until a smooth paste forms.
  3. Add cocoa powder and blend again until the dough comes together.
  4. Roll the dough into small balls and flatten and shape them on the prepared baking tray.
  5. Bake for approximately 7 minutes, until set around the edges but still soft in the center.
  6. Allow them to cool fully and set. Enjoy!

Notes

*If your dates look dry, place them in a bowl and cover with boiling water. Let them soak for 10 minutes to soften before draining and squeezing out excess water. 
 
STORAGE:
Store these in an airtight container at room temperature or in the fridge for up to 7 days.
