Easy Waffle Recipe without Milk (vegan, dairy-free)

Equipment

  • 1 Waffle iron
  • 1 food processor or blender

Ingredients
  

  • 1 (400g) can chickpeas drained and rinsed
  • 4 pitted medjool dates or 50 g of regular pitted dates
  • 2 cups rolled oats
  • 2 cups water
  • 1 tsp vanilla extract optional
  • cinnamon to taste optional

Instructions
 

  • Preheat waffle iron and spray with cooking oil if needed.
  • Add the rinsed and drained chickpeas, pitted dates, oats, water, vanilla, cinnamon into a blender or food processor.
  • Blend until mixture is smooth and lump free.
  • Scoop out around 1/3 to 1/2 cup (varies depending on size of waffle iron) of batter into preheated waffle iron.
  • Cook until golden brown. (dependent on waffle iron brand but usually 4 or 5 minutes)
  • Repeat with remaining batter. Serve while warm with any desired toppings!

Notes

*Make sure the waffle iron is hot and ready before pouring in the batter to ensure for the most crispy and delicious waffles.
