2-Ingredient Spinach Wraps (Keto Friendly)

Servings 4 medium sized wraps

Equipment

  • 1 food processor/blender

Ingredients
  

  • 1 cup spinach
  • 2 eggs
  • salt to taste (optional)

Instructions
 

  • Add spinach, eggs and salt (if using) to a blender. Blitz until smooth and spinach is incorporated. Batter will be runny.
  • Heat a medium non stick pan on medium heat and spray with a neutral cooking oil.
  • Pour one ladle of batter onto prepared pan, moving pan in a circular motion to evenly coat the bottom with batter. *
  • The wrap will be ready to flip once the edges are browning, the middle is set and it can be lightly shaken off the pan. Cook other side until the wrap is no longer sticking to the pan.
  • Repeat with remaining batter, respraying the surface of the pan as needed.
  • Allow the wraps to cool completely before filling them with your favourite ingredients! Enjoy.

Notes

*for a mini sized wrap, use 1/2 to 3/4 of a ladle worth of batter, and move pan in a circular motion until reaching desired size. 
 
Storage: Store in fridge for up to 3 days, or in the freezer for up to 3 months.
